AFTER CONVERTING A DECENT SECTION OF THE CABERNET IN OUR VINEYARD TO NEW CANES, DUE TO SOME EUTYPA OR ‘DEAD ARM’ CREEPING IN, THE VINES RESPONDED INCREDIBLY WELL.
THE FRUIT LOOKED PERFECT SO WE HAD TO MAKE A WORTHY WINE OF IT.
IT WAS HAND PICKED AND LOT WAS DE-STEMMED. IT FERMENTED HOT AND WE ONLY PUMPED IT OVER 3 TIMES. PRESSED OFF WHEN DRY.
